Matcha Tea Cookies

To celebrate the Chinese New Year we decided to make some matcha tea cookies.  If you love green tea, or any hot tea, these matcha cookies are a treat!  Matcha is a fine powdered Japanese green tea and these cookies are a heavenly green – not too sweet and...mmm...Is it tea time yet?

Matcha Tea Cookies

Makes 24 cookies

4 ounces unsalted butter, at room temperature
2 ounces powdered sugar
6 ounces all-purpose flour
2 ounces almond meal/flour
Pinch of salt
1 tablespoon Matcha Green Tea Powder*
Extra powdered sugar for coating the baked cookies

*Matcha green tea powder is available at Asian grocery stores and specialty tea stores.

Preheat the oven to 350 degrees.   Line two  cookie sheets with parchment paper and set aside

In a medium mixing bowl cream the unsalted butter and sugar until is smooth.  Stir in the flour, almond meal, salt and matcha green tea powder and mix it well.

Shape dough into 24 balls and place them on the cookie sheets.  Bake in the oven for 20 – 22 minutes.  Remove the baked cookies from the cookie sheet and cool them on a wire rack.  When cookies are cool, roll them in powdered sugar.   Store the cookies at room temperature in an airtight container.

Enjoy with a cup of tea!
