Grouper Sandwich


TGIF…What’s for lunch?  I’ve had a love-hate relationship with fish.  Fish was always on the lunch menu in boarding school and it sucked.  It took me many years before I gave fish a second chance and now I cannot get enough of it!  I ate a grouper fish sandwich at the Ritz Carlton in Florida (love those business trips) and have been craving for it since then!  This is my version of awesomeness!




Grouper Sandwich

2 6-ounce grouper filets
Cajun spice mix
1 tablespoon olive oil
Cajun tartar sauce (see below)
2 soft buns, sliced and toasted
Lettuce
Tomato slices
Red Onion slices
Lemon wedges

Cajun Tartar Sauce

½ cup mayonnaise
1 clove garlic, minced
1 tablespoon finely diced pickle
1 tablespoon capers, chopped
1 teaspoon Cajun spice mix
1 ½ teaspoon lemon juice


Rub each side of grouper filet with Cajun spice mix.

Heat oil and butter in a non-stick fry pan over medium high heat.

Add the grouper filets and cook about 4 minutes on each side or until the fish flakes easily with a fork.

Place the group filet on the bottom half of each bun.  Top with tomato, onion and lettuce.  Cover with top of the bun.  Serve with Cajun tartar sauce and wedge of lemon.
