Spicy Oatmeal

Maybe it’s just me….oatmeal , the good for you grain, is so blah. So I decided to do something really weird like adding harissa (my new BFF) and fried egg and..OMG.  So satisfyingly delicious.   Horrified??  I tell you no lie when I say it’s the only way to kick your metabolism into overdrive and spice your life at the same time.  I have you covered!  


Spicy Oatmeal

Serves 1

¼ cup dried regular (not instant) oatmeal
¾ cup water
¼ teaspoon salt
½ teaspoon harissa
1 egg
2 teaspoons oil or butter  
 
Combine oats and water in a small pan and cook on medium high heat and bring to a boil.  Reduce heat to low and simmer for about 5 minutes, stirring occasionally until oatmeal is thick and creamy.  

Stir in the harissa.

Heat 2 teaspoons of oil or butter in a small skillet.  Crack an egg into the pan and cook until the white appears solid, about 3 -4 minutes.

Add fried egg to the oatmeal.  Add salt and pepper to taste.
