Spicy Salmon and Green Peppercorn Curry

Sweet, salty, spicy food lovers…You know who you are!  I was craving green peppercorns; you know those under-ripe peppercorn berries in brine or vinegar that have a mild peppery flavor.  Green peppercorns, in addition to being a culinary treat, have many health benefits like…reducing gas, aiding digestion and even helping with weight loss (source:  www.green-peppercorns.com)   Don’t know about the weight loss since I haven’t even lost an ounce!!!  Have I tempted you for some flavor and a burst of heat?   Enjoy this delicious recipe.



Spicy Salmon and Green Peppercorn Curry
Serves 2

2 salmon steaks

1-1 ½   tablespoons Thai red curry paste
1 cup coconut milk
1 tablespoon lime juice
2 tablespoons fish sauce
1 teaspoon sugar
1 tablespoon green pepper corns in brine, drained
1 Thai red chili pepper, seeded and sliced 
In a skillet, add the red curry paste and coconut milk and cook for about 2 minutes on medium high heat.  Stir in the lime juice, fish sauce and sugar.   Add the salmon steaks.  Add the red thai chili pepper and green peppercorns.   Cook over medium heat, covered, turning the salmon once, until it is cooked and you can flake it.  Serve on rice.
