Lobster Roll

Most people associate lobster rolls with Maine and summer but I associate it with sales – that is, when lobster tails are on sale!  I usually grab two to make this delectable lunch.

Lobster Roll

Makes 2.
4 oz cooked lobster meat
2 tbsp mayonnaise
1 tsp lemon juice
Tabasco sauce to taste
1 spring onion, chopped
1 tbsp celery, finely chopped
1 tsp parsley, finely chopped

2 hot dog rolls
Butter

Cut the lobster meat into half-inch pieces and set aside.

In a small bowl, mix together the mayonnaise, lemon juice, Tabasco sauce, spring onion, celery, and parsley.  Gently fold in the lobster meat.

Generously butter the hot dog roll.  Fill the roll with the lobster mixture.
